A Healthier, Cheaper, Nut Bar
INGREDIENTS
1½ cups of mixed nuts (almonds, walnuts, cashews, pecans, macadamia)
½ cup of seeds (chia seeds, flax seeds, pumpkin seeds, sunflower seeds)
¼ cup of raisins or dried fruit (TODO: experiment with less (high sugar))
2 tbsp honey (TODO: experiment with less (high sugar))
2 tbsp nut butter (almond or peanut)
1 tsp vanilla extract
¼ tsp sea salt
½ tsp cinnamon (optional)
DIRECTIONS
- Line a baking tin with parchment paper (or oiled tin foil). Preheat oven to 160°C/325°F (140°C/285°F fan).
- Mix all nuts and seeds in a large bowl. Set aside.
- In a saucepan over low heat, combine honey and nut butter. Stir until melted and well combined, may require adding a small amount of water, about 2 minutes. Remove from heat and stir in vanilla extract and salt.
- Pour the honey mixture over the nut mixture and stir well until all nuts and seeds are evenly coated.
- Press mixture firmly into prepared tin, ensuring it’s packed tightly and evenly. Bake for 15-20 minutes until lightly golden.
- Allow to cool completely in tin for 2 hours before cutting into bars. Store in an airtight container.
