A Healthier, Cheaper, Nut Bar

INGREDIENTS

1½ cups of mixed nuts (almonds, walnuts, cashews, pecans, macadamia)
½ cup of seeds (chia seeds, flax seeds, pumpkin seeds, sunflower seeds)
¼ cup of raisins or dried fruit (TODO: experiment with less (high sugar))
2 tbsp honey (TODO: experiment with less (high sugar))
2 tbsp nut butter (almond or peanut)
1 tsp vanilla extract
¼ tsp sea salt
½ tsp cinnamon (optional)

DIRECTIONS

  1. Line a baking tin with parchment paper (or oiled tin foil). Preheat oven to 160°C/325°F (140°C/285°F fan).
  2. Mix all nuts and seeds in a large bowl. Set aside.
  3. In a saucepan over low heat, combine honey and nut butter. Stir until melted and well combined, may require adding a small amount of water, about 2 minutes. Remove from heat and stir in vanilla extract and salt.
  4. Pour the honey mixture over the nut mixture and stir well until all nuts and seeds are evenly coated.
  5. Press mixture firmly into prepared tin, ensuring it’s packed tightly and evenly. Bake for 15-20 minutes until lightly golden.
  6. Allow to cool completely in tin for 2 hours before cutting into bars. Store in an airtight container.
