Chilli Con Carne

Ingredients

  • 500g beef
  • Can of tomatoes
  • Can of cannelini beans
  • 2 red onions
  • 2 red peppers
  • Stock cube
  • Garlic
  • 1 tbsp Tomato paste
  • Smoked Paprika
  • Cumin
  • Salt & Pepper
  • Oregano

Method

  1. Dice onions, peppers and garlic
  2. Brown beef in large pan
  3. Add onions, peppers and garlic, cook until softened
  4. Add spices (paprika, cumin, oregano)
  5. Add tomatoes, tomato paste and crumbled stock cube
  6. Simmer for 30 minutes
  7. Add beans and cook for further 10 minutes
  8. Season with salt and pepper to taste

Serving

Serve with rice, grated cheese, and sour cream
Can be frozen for up to 3 months
